Snacks for a Busy Day

I've been a busy gal! It’s been a process organizing and decorating my apartment in the great state of Washington.  Being that I wasn't able to bring a lot of my belongings with me, I've been scouring the Goodwill to find treasures, but it’s coming along.

The other week I made some snacks to keep me motivated while organizing and re-organizing when I changed my mind.  Who doesn't love a good snack?!  The first snack was granola – I had found the recipe from Shape Magazine.

I gathered 1 cup of oats, 2 tbsp. creamy peanut butter, 2 tbsp. honey, ¼ tsp. cinnamon, and ¼ tsp. vanilla extract and preset the oven to 325 degrees.

I combined the honey and peanut butter and microwaved it for about 20 seconds until it was melted.  I added cinnamon and vanilla into the mixture.  Finally the oats were added and coated with the mixture.  I took a cookie sheet and sprayed non-stick cooking spray on it and then spread the mixture on the cookie sheet.  It was baked in the oven until it was slightly browned – about 10 minutes.  I let it cool and the granola became crunchy.  It was pretty tasty!

The second snack that I made was a fruit dip.  Now, unfortunately, I am not a big fan of fruit.  As much as I try, it is just is not something that I crave.  But, with this fruit dip, it just might change my mind on fruit!  I took a ½ cup of Nutella and 1 cup of plain greek yogurt and mixed it together.   It was the perfect ratio of chocolate and fruit – I ended up dipping apples and bananas, but I am sure that a lot of fruit would be tasty with this dip! :)

  3. Hi Holly! That granola sounds pretty good. I make one that I put on yogurt, but I like how yours is the snack it's self.
