Easter Sunday

I love Easter!  It is one of my favorite holidays - behind only Thanksgiving!  This holiday was a bit different for me, it was my first Easter away from my family though, so that was an adjustment.  Every year, my family would gather at my parent's home and spend time together.  I guess I was a bit spoiled, as my parent still got my sister and I Easter baskets - but we loved it!  In fact, even though I now live across the country, my Mom sent me a few goodies in the mail. :)

This Easter began as most of my Easter's have: going to Church. This year my boyfriend and I went to the early service so that we would get back to his apartment in time to video chat with my family right after they had finished eating dinner.  It may sound a little cheesy, but I loved it!  Seeing them made me feel like I was not so far away.  It was nice being able to actually SEE everyone.  I was able to show them what a beautiful day it is outside today!

After chatting with them, I set about making an Easter dinner for my boyfriend and myself.  Ham has always been the traditional meal for my family, so that is what I set about preparing.  I'd like to tell you that I used the old secret family recipe for the ham glaze, but in truth, I googled "ham glaze" and Betty Crocker popped up with a good recipe; plus, with a few minor modifications, I had all the ingredients.  It actually turned out really well - a nice mixture of sweet and tangy without over-powering the ham taste.


The glaze was nice and easy too!  You just had to mix the juice from 1 small orange, 1/4th  cup of brown sugar, 1 teaspoon of soy sauce and 1/2 teaspoon of mustard.  When the ham only has about 45 minutes left to bake, you brush the glaze on and that's it! :)  I had a small ham, so if you had a larger one, you may need to double or triple the recipe.  Along with ham, I made mashed potatoes, broccoli and green bean casserole.  It was a pretty tasty meal, if I do say so myself!

And now the rest of this beautiful day will be spent relaxing and working on organizing my coupons!  Hooray for savings! :)
