The Goodbye Party

I have been a Washingtonian for about two weeks – time sure does fly!  There have definitely been times of home sickness, that is for sure, but there have been a lot of good times as well.  Before I left Pennsylvania, I had a little goodbye party, simply because I didn’t have time to say “see you later” to everyone that I wanted to and I have been reminiscing on that time.  My dear friend brought a cake with the perfect message on it:

I was very blessed to be able to see and say “see you later” to a number of friends and family.  The next time that I will be heading east is for a friend’s wedding in May and again for another friend’s wedding in July.  As we were talking about their wedding plans and goofing off, this candid picture was taken of me showing off my non-engaged finger to the two engaged girls:

I have an incredible group of friends in Pennsylvania and I am hoping to develop close friendships here in Washington – all in good time.  I have met a ton of great folks so far and I am excited to meet more, but without a doubt, my east coast buddies are pretty amazing! I am one blessed girl! :)

And what party is complete without food?!  For the big party, I made an easy Crock-pot Pulled BBQ Chicken which seemed to be a hit.  It was all eaten, so that is a good sign!  Easy is the key word.  I put 6 frozen chicken breasts and about 2 cups BBQ sause in the crock-pot and mixed it around so that the chicken was pretty much covered.  I used Kraft's Hickory BBQ sauce, but any kind would do.  It was in the crock-pot on low for about 8 hours.  Then I shredded it, which was easy because it was so tender, and added a little more BBQ sauce to it so that it was nice and juicy.  Yes, that is it!  It was so easy that it felt like I was cheating! :P
